Mom's Chocolate Pie #3

This was one of my Mom’s specialties. More than once, she let us make it for dinner, saying, “life is short! Eat dessert first.” Truer words were never spoken-- especially by her.

  • 3 eggs, separated
  • 1 cup milk
  • 1 cup sugar
  • 1 heaping T butter
  • 2 oz chocolate, grated
  • 2 T flour
  • 2 t vanilla
  • 2 T sugar for each egg white

    Melt chocolate in a double boiler, add milk, and scald. Sift sugar and flour together and cream with butter; add 3 egg yolks and vanilla, beat mixture into hot milk and stir until thick. When cool, pour into previously baked pie crust and cover with meringue (or fresh whipped cream, which I prefer).

    For meringue:

    Beat egg whites until stiff, but not dry. Then, add sugar. Add 3/4 t vanilla.

    Bake at 325 for 12 to 15 minutes or 425 for 4 to 5 minutes.

If you don't like meringue, top it with fresh whipped cream.
