Fish Meuniere
use flounder or any flat white fish
ingredients
- 1/4 cup unbleached all-purpose flour
- 2 sole fillets or flounder fillets, each 5 to 6 ounces and 3/8 inch thick, patted dry
- Salt and ground black pepper
- 1 tablespoon unsalted butter
- Browned Butter
- 2 tablespoons unsalted butter , cut into 2 pieces
- 1 1/2teaspoons chopped fresh parsley leaves
- 2 teaspoons lemon juice from 1 lemon
- 1/2lemon , cut in wedges for serving
- 1 tablespoon vegetable oil
