use flounder or any flat white fish

ingredients

  • 1/4 cup unbleached all-purpose flour
  • 2 sole fillets or flounder fillets, each 5 to 6 ounces and 3/8 inch thick, patted dry
  • Salt and ground black pepper
  • 1 tablespoon unsalted butter
  • Browned Butter
  • 2 tablespoons unsalted butter , cut into 2 pieces
  • 1 1/2teaspoons chopped fresh parsley leaves
  • 2 teaspoons lemon juice from 1 lemon
  • 1/2lemon , cut in wedges for serving
  • 1 tablespoon vegetable oil
