Crab Bisque
ingredients
- 1 pound blue crab meat, picked
- 2 T onion, finely chopped
- 2 T celery, finely chopped
- 1/4 cup melted butter
- 3 T flour
- 1 1/2 T sugar (I usually use more)
- 1 t salt
- 1/4 t paprika
- dash white pepper
- 1 quart milk
- freshly grated nutmeg, if desired
- 1/4 cup chopped parsley
- A couple of T of cooking sherry or white wine, if desired

When I was a poor college student at Alabama, I tried this with Imitation Crab Meat. As a grownup, I do NOT recommend it.
