Crab Bisque

ingredients

  • 1 pound blue crab meat, picked
  • 2 T onion, finely chopped
  • 2 T celery, finely chopped
  • 1/4 cup melted butter
  • 3 T flour
  • 1 1/2 T sugar (I usually use more)
  • 1 t salt
  • 1/4 t paprika
  • dash white pepper
  • 1 quart milk
  • freshly grated nutmeg, if desired
  • 1/4 cup chopped parsley
  • A couple of T of cooking sherry or white wine, if desired

When I was a poor college student at Alabama, I tried this with Imitation Crab Meat. As a grownup, I do NOT recommend it.
