Sour Cream Coffee Cake Muffins

Ingredients

  • 1 c. butter, softened
  • 2 c. sugar
  • 2 large eggs
  • 1 c. sour cream
  • 1/2 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/8 tsp. baking soda
  • 1 c. pecan halves, chopped
  • 1/4 c. sugar
  • 1 1/2 tsp. cinnamon

    Preheat oven to 350. Beat butter at medium speed 2 min. or until creamy. Add 2 cups sugar, beating 2-3 min. Add eggs, 1 at a time, beating until blended. Add sour cream and vanilla, beating until blended.

    Whisk together flour and next 3 ingredients; gradually stir into butter mixture. (will be thick) Spoon into tins.

    Mix pecans, 1/4 c. sugar and cinnamon. Sprinkle over batter.

    Bake at 350 for 20-25 min.
