Broccoli and Chicken CasseroleSusan Neufeld

- 1/2 cup mayonnaise
- 1/4 cup flour
- 1 cup chicken broth
- 1/2 cup milk (fat free is fine)
- 10 oz. broccoli, steamed
- 1/2 tsp. curry powder
- 1/2 tsp. grated white onion
- salt and pepper to taste
- 1/4 - 1/2 cup parmesan cheese, shredded
- 4 cups cooked chicken, shredded or chopped
- juice of 1 lemon
Mix mayonnaise and flour is saucepan. Gradually blend in chicken broth, milk, onion, salt and pepper, and curry powder. Cook over low heat, stirring until thickened.
Add chicken to sauce when sauce is thick.
Grease 8 x 8 pan. Stir steamed broccoli with lemon juice and arrange at bottom of pan. Spoon chicken and sauce mixture on top.
Sprinkle with shredded parmesan cheese and paprika until covered.
Bake at 350 degrees for 25 minutes until cheese is melted and bubbling.
