Black Bean Soup
ingredients
- Olive oil
- Half a large onion, chopped
- 4 garlic cloves, chopped
- 1 1/2 teaspoons dried thyme
- 3 15oz cans black beans, drained
- 3-4 cups vegetable broth
- 1 28oz can diced tomatoes in juice
- 2 teaspoons ground cumin
- 1 1/2 teaspoons hot pepper sauce

1. Heat oil in large pot over medium heat. Add onion, garlic, and thyme; sauté until golden.

2. Add beans, broth, tomatoes with juice, cumin, and hot pepper sauce. Bring to a boil. Reduce heat and simmer for about 20 minutes, stirring occasionally.

3. Working in batches, or using an immersion blender, puree until smooth. Season with salt and pepper. Serve over brown rice.
