Black Bean Soup

  • 1. Heat oil in large pot over medium heat. Add onion, garlic, and thyme; sauté until golden.

  • 2. Add beans, broth, tomatoes with juice, cumin, and hot pepper sauce. Bring to a boil. Reduce heat and simmer for about 20 minutes, stirring occasionally.

  • 3. Working in batches, or using an immersion blender, puree until smooth. Season with salt and pepper. Serve over brown rice.
