South of the Border Chicken
ingredients
- 1 medium onion
- 1 tbsp butter, melted
- 3 cups chopped, cooked chicken
- 1 can cream of chicken soup, undiluted
- 1 (8oz) carton sour cream
- 1 (4oz) jar sliced mushrooms, drained
- 1 (4oz) can chopped green chiles, drained
- 1/2 cup sliced almonds, toasted (optional)
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 10 x 7" tortillas
- 1 cup sharp cheddar cheese, shredded
- 1/3 cup milk

Preheat oven at 350°

Saute onion in butter in a large saucepan until tender. Stir in the next 9 ingredients, mixing well.

Spoon about 1/2 cup chicken mixture in center of each tortilla.

Roll up and place seam side down in a lightly greased 13“x9”x2" baking dish.

Combine remaining ingredients. Spoon over tortillas and bake uncovered for 35 minutes.
