Grandma Rogers' Brownies
ingredients
- 1 lb. butter, melted
- 4 c. sugar
- 6 eggs
- 2/3 c. cocoa
- 2 tsp. vanilla
- 1 - 1 1/2 tsp. almond extract (optional)
- 2 tsp. cinnamon (optional)
- 4 c. flour
- 2 c. chopped walnuts, dry toasted (optional) (reserve 1/4 cup)
directions
Combine butter, sugar, and eggs and cream thoroughly until almost white. Add cocoa and mix until well-distributed. Add vanilla, almond extract, and cinnamon. Add flour one cup at a time. Fold in walnuts (1 3/4 cup) and pour into 13x18 pan lined with aluminum foil or parchment paper. Sprinkle reserved walnuts onto batter in pan. Bake at 350° for 20-25 minutes or until toothpick inserted in center comes out clean.
notes
For a more chocolatey flavor, add 1/4 to 1/2 cup melted semisweet chocolate chips to batter. Reduce sugar by an equal amount so brownies are not over-sweet. For more cake-like brownies, use 8 eggs instead of 6.
