Greek Salad

Serves 2 for dinner or up to 6 as a side

ingredients

  • 2 cloves garlic, minced
  • 1/3 cup Extra-virgin olive oil
  • Juice of 1 large lemon
  • A pinch of allspice
  • Kosher salt and cracked black pepper, to taste
  • 2 hearts romaine lettuce, chopped
  • 2 plum tomatoes, diced
  • 1/2 medium red onion, sliced very thin
  • 1/2 seedless cucumber, sliced thin
  • A handful pepperoncini hot peppers, chopped
  • A palmful (2 Tbsp. or so) chopped fresh oregano
  • 1/4 lb. feta crumbled
  • A handful pitted, oil cured or Kalamata black olives
