Chicken Pueblo
ingredients
- Four 6-8 oz boned and skinned whole chicken breasts
- Marinade:
- Juice of 2 grapefruits (about 1 1/2 cups)
- Juice of 1 orange (about 1/2 cup)
- 2 Tablespoons olive oli
- 2 Bay Leaves
- 1/4 red bell pepper-fine julienne
- 1 samll jalapeno chili seeded and chopped
- 2 small poblano chilis seeded and chopped
- (1 serrano chili or a few drops of Tabasco sauce can be substituted)
- 1/4 cup roughly chopped cilantro leaves
- 1 medium onion, peeled and sliced
- Vegetable garnish:
- 3/4 lb fresh green beans
- 1 small red bell pepper-fine julienne
- 2 Tablespoons clarified butter
- 2 cups heavy cream
- Salt and pepper to taste
- 1 garlic clove
- 1 shallot, minced
- 1 Tablespoon olive oil
