Pecan Biscotti

Ingredients

  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/3 cup margarine (NOT melted)
  • 1/4 cup of water
  • 1 tablespoon vanilla
  • 2 3/4 cup all purpose flour
  • 2/3 cup chopped pecans
  • 2 1/4 teaspoons baking powder

    1. Preheat oven to 350*.

    2. Coat a cookie sheet with nonstick spray.

    3. Blend the eggs with the sugar.

  • 4

    4. Beat in the margarine, water and vanilla until smooth.

    5. Add the flour, pecans and baking powder.

  • 6

    6. Mix until a soft dough ball forms.

    7. Divide the dough in three equal portions.

    8. On a lightly floured surface roll each portion into a log shape.

    9. Place the three rolls on the baking sheet.

    10. Bake for 20 minutes.

    11. Remove logs from cookie sheet and let cool for 5 minutes.

    12. Cut the logs on an angle into 1/2 inch slices.

    13. Re-Spray the baking sheet with non-stick spray.

    14. Place the slices cut side down on the cookie sheet.

    15. Bake for 12-15 minutes.

    16. Flip the cookies to the other side.

    17. Bake for an additional 10-12 minutes.

    18. Eat.

Store in an airtight container for 2 weeks or freeze for about a month. Goes great with coffee or hot chocolate.
