Red Yam Flan

ingredients

  • 2 or 3 red yams (about 1 1/4 lbs to yield 1 1/2 cups puree
  • 1 1/2 cups sugar
  • 1/4 cup water
  • 8 eggs
  • 2 egg yolks
  • One 14oz can condensed milk
  • 1 cup heavy cream
  • 1 cup half and half
  • 1 1/2 teasoons vanilla extract
  • 1/2 teaspoons each ground cinnamon, allspice and nutmeg

The flan can be made up to 4 days in advance and kept chilled in the frig, tightly covered with plastic wrap.
