Red Yam Flan
ingredients
- 2 or 3 red yams (about 1 1/4 lbs to yield 1 1/2 cups puree
- 1 1/2 cups sugar
- 1/4 cup water
- 8 eggs
- 2 egg yolks
- One 14oz can condensed milk
- 1 cup heavy cream
- 1 cup half and half
- 1 1/2 teasoons vanilla extract
- 1/2 teaspoons each ground cinnamon, allspice and nutmeg

The flan can be made up to 4 days in advance and kept chilled in the frig, tightly covered with plastic wrap.
