Potatoes RomanoffCarrie Zinnecker
Christmas staple side dish from Becky Sundbeck, adapted slightly.
- 4 medium potatoes
- 1 cup sour cream
- 2 cups grated white or yellow cheddar
- 1 1/4 cup chopped green onions or 3/4 cup minced shallots
- 1 1/2 t salt
- 1/4 t pepper
- dash paprika
Scrub potatoes, sprinkle with olive oil and salt, wrap in foil and bake until tender, 1 to 1 1/2 hours @ 400°F. Cool then refrigerate overnight.
Grate potatoes with or without skin.
Combine potatoes, onions, 1 1/2 cups cheese, salt and pepper then fold in sour cream.
Turn into buttered casserole dish. Sprinkle with cheese and paprika. Bake @ 350°F for 30-40 minutes.
