Cranberry Salsa with Goat Cheese BombSarah Woodson
A friend at work made this for a potluck we had (Sarah). It is very festive and tastes great too!
- 3 c Fresh Cranberries, coarsely chopped
- 2 Cloves garlic, Minced
- 1/2 c Cilantro, Chopped
- 4 Green Onions, Chopped
- 2 Jalapeno Peppers, seeds removed and chopped (optional)
- 2/3 c Sugar
- Juice from 2 limes
- 8 oz Cream cheese (Room Temp)
- 4 oz Butter (Room Temp)
- 2 oz Goat cheese (Room Temp)
Combine all ingredients. Refrigerate until use… Best when sits for a few hours or overnight.
For Cheese Bomb:
Process all ingredients in a food processor (or use a hand mixer) until smooth. Form into a ball, wrap with wax paper (or plastic wrap) and chill till firm.
Spoon Cranberry Salsa on top of cheese bomb. Serve with crackers (like Wheat thins) or tortilla chips
