Vegetarian Wellington with Citrus Beurre Blanc

Quick, Easy, Beautiful. Makes a lovely presentation as a vegetarian main dish as well as a perfect side for grilled fish. Even children who “hate” vegtables have taken to prepartion of baked and healful greens. It also works well with many substitutions of vegatables on hand.

ingredients

  • 1 Sheet Frozen Puff Pastry
  • 1 large package of frozen spinach (or equivent fresh)
  • 1 Red Pepper, chopped
  • 1/2 cup chopped onion
  • 1/4 cup chopped carrot
  • 1/4 cup chopped flat leaf parsley
  • 3/4 cup sliced mushrooms
  • 1 egg
  • 2 TBS butter
  • dash of cyennne pepper to taste
  • 1/2 TEAS Garlic Salt
  • Pepper to taste
  • Optional 1/4 cup roasted chopped hazelnuts
  • For Sauce
  • 1/2 cup dry white wine
  • 1/4 cup minced shallots
  • 3 TBS Fresh lemon juice
  • 1/2 cup whipping cream
  • 1/4 cup (1/2 stick butter
