Basic Pancakes
From Mark Bittman’s book, with a few tweaks.
ingredients
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1/2 cup regular oatmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 eggs
- 1 to 2 cups milk
- 2 tablespoons oil, or melted butter

For banana pancakes: after beginning to cook each batch, place a few banana slices onto the top of each pancake and press lightly. Cook slowly. Can vary the amounts of flour, e.g., can use 2 cups all-purpose flour, 1 cup white and 1 cup whole wheat, etc.
