Yummy Greek chicken and lemon soup

  • Precook the black rice so it doesn’t stain the broth a dark color.

  • In a large saucepan over high heat, heat broth and white rice to boiling. Reduce heat to low; cover and simmer 15 minutes or until rice is tender.

  • In small bowl ,with wire whisk or hand beater, beat eggs and lemon juice together until frothy.

  • Into egg mixture, stir amount of hot broth; pour egg mixture into broth, stirring. Add black rice and chicken pieces and cook over low heat, stirring, until soup is hot (do not boil).
