Roast Chicken with Soy Sauce

ingredients
- 1 whole (3- to 4- pound) chicken, trimmed of excess fat, then rinsed and patted dry with paper towel.
- 1/4 cup soy sauce
- 2 tablespoons canola oil
- 2 tablespoons honey
- 1 teaspoon minced garlic
- 1 teaspoon peeled and grated or minced fresh ginger, or 1/2 teaspoon ground ginger
- 1/4 cup minced scallions
- Salt and freshly ground black pepper to taste

To make simpler: for mixture of soy sauce, canola oil, honey, garlic, ginger, and scallions, can substitute 3 tablespoons olive oil with 2 teaspoons fresh thyme, rosemary, marjoram, oregano, or sage leaves, or 1 teaspoon dried.
