Roast Chicken with Soy Sauce

ingredients

  • 1 whole (3- to 4- pound) chicken, trimmed of excess fat, then rinsed and patted dry with paper towel.
  • 1/4 cup soy sauce
  • 2 tablespoons canola oil
  • 2 tablespoons honey
  • 1 teaspoon minced garlic
  • 1 teaspoon peeled and grated or minced fresh ginger, or 1/2 teaspoon ground ginger
  • 1/4 cup minced scallions
  • Salt and freshly ground black pepper to taste

notes

To make simpler: for mixture of soy sauce, canola oil, honey, garlic, ginger, and scallions, can substitute 3 tablespoons olive oil with 2 teaspoons fresh thyme, rosemary, marjoram, oregano, or sage leaves, or 1 teaspoon dried.
