  • 3/4 cup skim milk
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup fine corn flour
  • 1/2 cup white whole-wheat flour
  • 1 tsp low-sodium baking powder
  • 1 cup fresh or frozen corn (if frozen
  • thaw prior to use, kernels from 2 cobs)
  • 1 jalapeno pepper, seeded and minced
  • 2 egg whites
  • 1 tbsp raw honey
  • Olive oil cooking spray
  • 1 12 inch oz low fat cheddar cheese, grated (about 1/4 cup)
