Banana Bread
⅓ cup sugar
⅓ cup dark brown sugar
2 eggs
3 Tbsp buttermilk or regular milk
1½ tsp vanilla extract
1 cup very ripe, darkly speckled bananas well mashed
1¾ cup white flour sifted along with ¼ cup wheat flour
1 tsp baking powder
½ tsp salk
¼ tsp nutment
2-3 Tbsp finely chopped walnuts
Preheat oven to 350 degrees. Butter the inside of a 9x5x3" loaf pan.
In a small bowl, mix together sifted flours, baking powder, salt
In a large mixing bowl, cream together the butter and sugars until fluffy. Add eggs one at a time, mixing well after each. Add mashed bananas, milk, and vanilla and mix well. Using a rubber spatula fold the flour mixture in three equal parts into the banana mixture until just combines and batter looks thick and chunky. Stir in chopped wlanuts. Scrape batter into loaf pan. Bake until loaf is golden brown and toothpick inserted in center comes out clean, about 50-55 minutes.
Cool in pan for 15 minutes then transfer to wire rack to finish cooling.

When I was in high school I used to make banana bread -that and carrot cake were the 'in' breads to make in the early 1970's. I loved the taste. Later on my brother used this recipe to make it often for our parents.
