Spicy Shrimp & Crab Bruschetta
ingredients
- 1/4 C Bottled clam juice
- 6 oz. uncooked large shrimp
- 6 green onions, thinly sliced
- 1/3 C low fat mayo
- 1 tbs. fresh lemon juice
- 1/4 Teas. cayenne pepper
- 1/2 Teas. paprika
- 4 oz. crab meat, drained. Preferably fresh if you can. Its much better.
- 1/2 baguette-sour dough, cut diagonally into 1/3 inch thick slices
- 3 tbs. olive oil
directions
Bring clam juice to boil in medium sauce pan. Add Shrimp, reduce heat to medium, cover and cook about 2 min. Remove, coarsely chop after cooled. Mix green onions, mayo, lemon juice, spices then add shrimp & crab. Season to taste with salt & pepper. Can cover and chill for up to 6 hours. Brush both sides of bread slices with butter and arrange on baking sheet. Cook 375° for about 10 minutes. Cool then mound mixture on top and serve.
