Apple Banana Bread
I adapted a recipe from an old Betty Crocker cookbook, to add the yogurt, apples, and cinnamon. You can also substitute blueberries for the apples if you prefer. Both are delicious!
ingredients
- 1 1/4 cups sugar
- 1/2 cup stick butter, softened
- 2 large eggs
- 1 1/2 cups mashed ripe bananas (3 to 4 medium)
- 1/2 cup nonfat vanilla yogurt
- 2 1/2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 cup apple, peeled and diced

Preheat oven to 350°F and move rack to lowest position to tops of pans will be in the center of the oven. Grease 2 8" loaf pans.

Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas and yogurt. Whisk until smooth. Stir in flour, baking soda, salt, and cinnamon. Stir in apples. Pour into pans.

Bake about 1 hour, until toothpick inserted in center comes out clean. Cool completely before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Can also be frozen immediately after cooled.
