Mint Chocolate Ice Cream Cake

I always thought ice cream cakes would be impossible to make, but this is a very easy recipe.

  • CAKE
  • 1 (18 ounce) package mint cookies
  • 1/4 cup margarine, melted
  • 3/4 cup hot fudge topping
  • 2 quarts mint chocolate chip ice cream
  • TOPPINGS (optional)
  • whipped cream

    Crush the cookies to make crumbs. Put the crumbs into a food processor and pulse until they are finely ground. Put crumbs in a bowl and combine with melted margarine and press into the bottom of a 9-inch cake/pie pan. Spread the hot fudge over crust. (Make sure you follow the directions for the hot fudge before you use it.) Freeze for 15 minutes.

    Meanwhile, soften the ice cram for a few seconds in the microwave. After crust has chilled, spread softened ice cream over fudge layer. Freeze for 30 minutes.

    Add toppings. Freeze for at least 4 hours or overnight.


Try using different cookies and ice cream of your choosing. For example, you can make an Oreo cake with oreo cookies and cookies and cream ice cream.
