Pan Roasted Corn Salad with Tomatoes and Feta
A seasonal blend of sweet corn and juicy tomatoes.
ingredients
- 4 ears of corn husked
- 2-3 TBSP unsalted butter
- 4 TBSP extra virgin olive oil
- 1 clove garlic minced
- 1 tsp coarsely chopped fresh thyme
- 1 bunch of green onions green portions only thinly sliced on the diagonal
- salt and pepper to taste
- 2-3 cups halved cherry tomatoes
- 8 oz feta cheese, cut into 1/2 inch cubes (or get crumbled)
- Juice of 1/2 lime or to taste
- 2 TBSP finely slivered fresh basil
