Apple Pie of Roses

  • For the dough:
  • 125 g soft butter
  • 70 g Powdered sugar
  • 1 pkg vanilla sugar
  • 1 teaspoon grated orange peel
  • 1 egg
  • 100 g finely ground almonds
  • 150g flour
  • For the cream:
  • 400ml milk
  • 100ml white wine
  • 3 egg yolks
  • 1 pkg vanilla sugar
  • 1 teaspoon grated orange peel
  • 6 tablespoons sugar
  • 4 tablespoons flour
  • 5-6 apples

    Beat soft butter with powdered sugar, vanilla sugar and orange peel. Add egg and ground almonds. Add flour gradually to make a soft dough.

    Dust a 22/24 cm greased baking pan with flour. Spread the dough evenly in it. Place in refrigerator while preparing the cream.

    For the cream, in a sauce pan mix the flour with vanilla sugar and orange peel. Add yolks and a little milk. Stir until smooth. Pour in the remaining milk and wine. Bring the cream slowly to a boil, stirring constantly until thickened, then let it cool.

    Optionally you also can use instant vanilla cream or pudding.

    With a vegetables peeler cut the apples in long strips without removing the crust.

    Wrap the strips into apple roses.

    Pour the cream on top of the dough and arrange the apple florets close to each other.

    Glaze the roses by slightly brushing them with the warmed apricot jam. Bake cake in preheated oven at 180 Celsius until the dough is baked and apples become golden.

    This looks beautiful and will have to try. I am guessing you are stripping down the entire apple and using those strips without the peel on the inside and just keep rolling the others around it with the last strip being the peel. Junk the core part but use the rest like a baked apple!

    I believe there is more information needed to make this pie as in the picture. The giving amounts are not correct, there is to much custard, how you cut the apples to be able to wrap the apple to make it look like a rose, once the skin is peel and wrap, then what you do with the rest of the apple, the pan I used was 22X29 cm, not 22X24cm, or I would had to use to pans. Also there in not enough apple flavor. Made it four times and was disapointed each time I made it.
