Ingredients

  • 1 onion -- diced
  • 2 stalks celery -- finely chopped
  • 2 cloves garlic -- chopped
  • 2 teaspoons parsley -- finely chopped
  • 3 1/2 pounds chicken -- cut up
  • 1/4 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cinnamon
  • 1 medium can tomatoes
  • 1 small can tomato sauce
  • 1/2 cup red wine
  • 1 teaspoon brown sugar
  • 1 cup rice

Saute onion, garlic, celery and parsley in 2 T drippings or butter. Add chicken pieces. Brown well. Add spices. Continue browning, stirring constantly, 5 minutes. Add tomatoes, wine and brown sugar. Bring to bubbling boil. Cover and simmer on low heat 1 hour or until chicken is nearly done, adding boiling water as needed (1/2 cup at a time) to keep gravy medium thick. Thirty minutes before serving time, add 2 c. boiling water and 1 cup rice. Bring to boil; reduce heat. Continue cooking, stirring often, until rice is cooked (20 to 25 minutes). Serve with tossed salad, French bread and wine
