Carrot Cake

servings:Makes 8-12


  • 4 eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • 1 1/4 cup vegetable oil

    1. Preheat oven 175 °C. Grease a 9x13 inch pan or springform pan or 2-9 cake inch pan.

    2. In a bowl, beat together eggs, oil, sugar and 2 tsp vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir in carrots. Fold nuts. pour in pans.

    3. Cook until cake until cake tester comes out clean.

    4. Cool completely and frost with cream cheese.
