Mom’s Chicken Casserole
This recipe is one that mom put in the 1975 Willow Glen Baptist Church cookbook (remember the orange one?!) and is a family favorite. We love our comfort food!
ingredients
- 1 fryer chicken
- 1 cup celery
- 2 tsp. onion
- 1/2 cup slivered almonds
- 2 cups cooked rice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. lemon juice
- 3/4 cup mayonnaise
- 1/4 cup chicken broth
- 3 hard boiled eggs
- 1 can cream of chicken soup

Hint: If you don't have time to boil a chicken, you can get one of those roasted chickens and use canned or cartoned chicken stock.
