Twice Baked Potatoes
These are good anytime. We love them with Randy’ Beef Brisket.
ingredients
- 6 large baking potatoes
- 1 large Vidalia onion
- 1 stick butter
- 1 small container sour cream
- 1 1/2 cup shredded cheddar cheese
- salt and pepper to taste
- Extra cheddar cheese for garnish
directions
Wash and poke potatoes with fork. Bake 400° for about 1 hour until done. Remove potatoes from oven and let cool slightly. In fry pan, saute onion until tender but not brown. Cut a small top out of potato and scoop out placing in a large bowl. Add onions, sour cream and cheese, salt and pepper to taste and mix well. Place back in potato boat, put the top back on, sprinkle with cheddar cheese and place under broiler for a couple minutes until cheese is melted and potato is warm.
