Vietnamese Banh Mi sandwiches are becoming very well known across the east coast of the nation. I miss walking to the corner deli where I lived in Renton to pick up this delicious barbecued pork sandwich.
ingredients
Banh Mi- 1 french baguette, cut in half
- 1/4 cup mayonnaise
- 8 oz Char Siu (Chinese BBQ pork), thin sliced
- 1/4 cup pickled daikon and carrots*
- 2 jalapeno chiles, sliced
- 1/4 cup cilantro leaves
- soy sauce
- cucumber slices (thin)
- 1/2 lb. carrots, shredded
- 1/2 lb. daikon radish, shredded
- 3 cups warm water
- 3 tbsp rice vinegar
- 3 tbsp sugar, depending on how sweet you want your pickles
- 2 tbsp salt
