Winters Night Soup
This soup freezes VERY well and is a wonderful re-warmed up.... I usually double the recipe
ingredients
- 1 pound ground turkey or chicken
- 4 cups chicken broth
- 1 15 ounce can red beans (rinsed and drained)
- 1 15 ounce can white beans (rinsed and drained)
- 1 16 ounce can chopped tomatoes (garlic and basil)
- 1 15 ounce can sliced white potatoes
- 1 10 ounce can whole kernel corn
- 1 10 ounce package frozen seasoning blend (peppers, onions, celery, and parsley)
- 1 medium Zucchini cut in to coins
- 1 medium Yellow Squash cut in to coins
- 2 tsp. olive oil full bodied
- 1 tsp. salt
- 2 tsp. black pepper
- 1 tsp. dried basil
- 1 to 2 clove garlic, minced
directions

In a stew pot, over medium heat oil and garlic until fragrant.

Brown and crumble meat being mind full not to burn in the oil.

Add broth and frozen seasoning blend, cook until slightly tender.

Stir in the beans, tomatoes, corn. Simmer for 45 minutes.

Add potatoes, squash, and zucchini, simmer, covered, for an additional 20minutes.
