Aged Cheese Scones
Try not to eat them all at one time!
ingredients
- 2 C flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tbsp sugar
- 1/2 C cold butter
- 1 C grated aged cheddar
- 1 C buttermilk
- 1 large egg, beaten

Preheat oven at 425°F.

Mix all dry ingredients together in a bowl.

Add butter, work until texture is like small peas.

Add cheese.

Gently add buttermilk and do not overmix. Makes a ball.

Turn onto floured surface.

Flour hands, knead till flat circle 1" thick.

Cut into 8.

Brush with egg.

Bake 12-15 minutes till puffed and golden.
notes
Buttermilk substitue: 1 c milk with 1 tbsp vinegar or lemon juice. Let stand for 10 minutes.
