Fresh Tomato Sauce
Best made towards the end of summer when tomatoes are in abundance.
ingredients
- 8 plum tomatoes
- 1 onion
- 1 head of garlic (not clove, head!)
- 1 jalapeno (optional)
- fresh basil
- pasta
directions

Preheat oven to 425°F.
- 2
Quarter tomatoes.
- 3
Cut onions into 1/8.
- 4
Chop bottom off bottom of garlic.

Roast everything for an hour in an uncovered casserole dish.

Throw everything into a blender.

Season with salt and pepper to taste.

Stack a few basil leaves, roll, chop. Add to sauce and serve over pasta.
