Chicken Roll-ups
ingredients
- 6 chicken breasts
- pesto
- Swiss cheese, thinly sliced
- 1/2 bread crumbs
- paprika
- 4 tsp butter, melted

Preheat oven to 400°F.

Pound chicken breasts between sheets of waxed paper until 1/4“ to 1/8” thick.

Place chesse in a strip along elength of each breast, trimming to fit as necessary.

Starting at narrow end, roll up.

In a small bowl, combine bread crumbs, paprika and butter.

Coat each roll-up with crumbs and place, seam side down on cookie sheet.

Bake for about 20 minutes or until chicken no longer pink.
notes
You can use any kind of cheese or pesto.
