Poppy Seed Chicken Casserole

  • 1 deboned chicken
  • 2 chicken bouillon cubes
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 2 tablespoons (one small jar) diced pimento-drained
  • 1/2 cup melted butter
  • 1 pound frozen English peas
  • Salt and pepper to taste
  • 1 roll crushed Ritz crackers
  • 2 tablespoons poppy seeds

    Cook chicken in crock pot and save the juice.

    Preheat oven to 350°. Put the chicken, soup, sour cream, peas, and pimento in a big bowl and mix well. Add juice or stock from the chicken until it is the consistency you want it to be. Salt and pepper to taste. Put this mixture in a casserole dish. In a separate bowl, melt butter. Add the poppy seeds and crackers and mix well. Cover the top of the casserole with the cracker mixture. Bake for 25 minutes or until the crackers are slightly browned and the casserole is bubbling well around the edges. Remove from the oven, think of me, and say a little prayer. Enjoy!
