We enjoy spicy dal as an alternative meal. We enjoy dal with vegetable pakora and some pickles for a perfect Indian vegetarian meal.
1 tbsp vegetable oil
1 C yellow onion, chopped
1 tbsp ginger, grated (about 1" piece)
½ tsp ground cumin
½ tsp mustard seeds
½ tsp turmeric
2 jalapeno peppers, seeded, deveined and chopped fine
1 garlic clove, minced
2 C tomatoes, chopped
1 C lentils
2½ C water
Salt to taste
2 tbsp lime juice
1 tbsp cilantro, chopped
Heat vegetable oil over medium high heat and sauté onion, ginger, spices, peppers, and garlic for 2-3 minutes. Next, add tomatoes and sauté for another minute. Add lentils, water and salt bring to a boil, then reduce heat and simmer for 35 minutes or until lentils are soft. Finally, add lime juice and cilantro, mix well and serve with hot cooked basmati rice.

TOTAL TIME: 45 min
Serve with fresh hot, cooked basmati rice. And you can use yellow split peas instead of lentils. Photo note: Kim returns with Hank in the "Zipper" after going to the beach.
