Vegetable Pakora

Pakora’s are one of our favorites whenever we enjoy Indian food. I love the spicy flavors and the vegetables in these fried dumplings type appetizers.

  • Make the batter by mixing the chickpea flour, oil, spices and water. Beat the batter for 4-5 minutes to incorporate some air into the mix. Let batter rest for 30 minutes in a warm place. After resting the batter, mix in the chopped vegetables.

  • Drop a large dollop of the batter and vegetable mix into hot oil and fry until deep brown about 4-6 minutes. Drain on paper towels and serve immediately. Serve with curry mayonnaise or chutney.
