Pakora’s are one of our favorites whenever we enjoy Indian food. I love the spicy flavors and the vegetables in these fried dumplings type appetizers.

ingredients

  • 1 C chickpea flour
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp ground coriander
  • 1/2 tsp chili powder
  • 1 1/2 tsp salt
  • 3/4 C water
  • 1 - 2 jalapenos, seeded, deveined and chopped
  • 1 tbsp cilantro, fresh chopped
  • 1 C cooked potato or yam, cut into 1/4 cubes
  • 1 C cauliflower, broken into very small florets
  • 1 C spinach, chopped
  • 1 1/2 C onions, coarsely chopped

    Make the batter by mixing the chickpea flour, oil, spices and water. Beat the batter for 4-5 minutes to incorporate some air into the mix. Let batter rest for 30 minutes in a warm place. After resting the batter, mix in the chopped vegetables.

    Drop a large dollop of the batter and vegetable mix into hot oil and fry until deep brown about 4-6 minutes. Drain on paper towels and serve immediately. Serve with curry mayonnaise or chutney.

notes
