Vegetable Pakora
Pakora’s are one of our favorites whenever we enjoy Indian food. I love the spicy flavors and the vegetables in these fried dumplings type appetizers.
ingredients
- 1 C chickpea flour
- 2 tbsp vegetable oil
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/2 tsp ground coriander
- 1/2 tsp chili powder
- 1 1/2 tsp salt
- 3/4 C water
- 1 - 2 jalapenos, seeded, deveined and chopped
- 1 tbsp cilantro, fresh chopped
- 1 C cooked potato or yam, cut into 1/4 cubes
- 1 C cauliflower, broken into very small florets
- 1 C spinach, chopped
- 1 1/2 C onions, coarsely chopped

Make the batter by mixing the chickpea flour, oil, spices and water. Beat the batter for 4-5 minutes to incorporate some air into the mix. Let batter rest for 30 minutes in a warm place. After resting the batter, mix in the chopped vegetables.

Drop a large dollop of the batter and vegetable mix into hot oil and fry until deep brown about 4-6 minutes. Drain on paper towels and serve immediately. Serve with curry mayonnaise or chutney.
notes
