ingredients

  • 1 lb. bread, cubed
  • 1/4 c roasted red peppers, chopped
  • 1/4 c scallions, sliced
  • 1/2 c grated Parmesan cheese
  • 1 lb. chopped tomatoes
  • 1/4 c black olives, sliced
  • 1/2 c shredded mozzarella cheese
  • 6 eggs
  • 3 c milk
  • 2 T capers, chopped
  • Salt and pepper to taste

    1. Grease a 9“x13” pan.

    2. Sprinkle half the bread on the bottom. Sprinkle with peppers, onions, and Parmesan. Sprinkle the other half of the bread in the pan, then sprinkle with tomatoes, olives, capers, and mozzarella.

    3. Whisk together eggs, milk, salt, and pepper and pour over the top.

    4. Put in the fridge overnight. The next morning, bake at 325°F for 45 minutes, until golden brown and set.

notes

This is a great brunch item because you assemble it the night before. You can add things or eliminate any ingredients with the exception of the bread, eggs, and milk.
