Cheesecake
ingredients
Crust:- 1 c graham cracker crumbs
- 3 T butter
- 3 T sugar
- 2 lb. 3 oz. cream cheese, soft
- 12 oz. sugar
- 5 eggs
- 12 oz. sour cream
- 9 oz. half & half
- 1/2 t each vanilla and orange extract

1. Preheat oven to 350°F.

2. Cut out a 10“ circle of parchment paper (use a cake pan to trace it), put it in the bottom of a 10” springform pan and grease the pan. Combine the crust ingredients and press them into the bottom of the pan. Bake for 10 minutes, then cool.

2. Cream cream cheese and sugar well.

3. Add eggs in three batches, scraping the bowl well each time to avoid lumps.

4. Add the rest and pour into prepared pan.

4. Bake at 350°F in a water bath for 1 1/2 hours, rotating once while cooking. Let cool well before removing side of pan and refrigerate before serving.
notes
The easiest way to cut cheesecake is with fishing line or dental floss.
