Pot Stickers & Dipping Sauce
When I was back in college 30 years ago we used to make egg rolls and won tons. No, they weren’t pot stickers but they were close. They were a favorite of mine then as they are now. These pot stickers have a lot of ginger in them and you could adapt the filling to making egg rolls too. You can add some chopped shrimp or fish to the filling too, just adjust the amount of ground pork used.
ingredients
Pot stickers:- 1 1/2 C Bok choy, chopped fine or minced
- 1 1/2 C Napa cabbage (or regular cabbage), chopped fine or minced
- 2 tsp salt
- 1 lb. ground pork
- 1/2 onion, minced
- 2 garlic cloves, minced
- 1/2 tsp black pepper
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp ginger, grated
- 1/2 egg, beaten
- 24 wonton or gyoza wrappers
- 4 tbsp vegetable oil
- 1 C water
- 1/4 C soy sauce
- 2 tbsp rice vinegar
- 2 tbsp Mirin (sweet Japanese Rice Wine)
- 2 tbsp water
- 1/2 sesame oil
- 1 tsp onion, grated
- 1/4 tsp cayenne pepper or Sambal Oelek

Place bok choy and cabbage into a strainer/colander and sprinkle salt over top, mix well and let stand for 30 minutes. Press mixture with hands to remove as much water as possible. Add bok choy and cabbage to bowl with pork, onion, ginger and garlic and mix well. In a separate small bowl mix pepper, soy sauce, sesame oil, and beaten egg very well. Add this mixture to bowl that contains cabbage and pork and mix all ingredients very well.

Place wonton or gyoza wrapper down and add about 1 t to 1 1/2 t of filling in center. Dip finger in bowl of water and moisten edge of wrapper with water. Fold wrapper in half making sure to squeeze out any air and ensure that filling is tightly sealed within wrapper. Repeat process until all wrappers are used or until filling is all used.

Heat frying pan over high heat with 1-2 T of oil depending on size of frying pan. If pan is large enough to fit 12 pot stickers use 2 T of oil, smaller use less oil. When oil is hot, add pot stickers to frying pan in a single layer. Fry for about 5 minutes or until bottom of pot stickers are nicely browned. Reduce heat to low and pour in about 1/2 C of water and immediately place a lid on frying pan and let pot stickers steam for about 10 minutes. Water should be mostly absorbed. Remove frying pan lid, increase heat and fry about 3 or 4 minutes more. Set pot stickers aside. Wipe pan clean with paper towel and repeat process until all pot stickers are cooked.

Make dipping sauce by mixing all ingredients together into a bowl.

Serve warm pot stickers with dipping sauce and enjoy.
