Stuffed Flank Steak
ingredients
- 1/2 c dry breadcrumbs
- 1/2 c grated Parmesan cheese
- 1/4 c olive oil (plus a little extra)
- 2 garlic cloves, roasted and mashed
- 1 1/2 lb. flank steak, butterflied
- Salt and pepper to taste

1. Preheat oven to 350°F.

1. Combine first four ingredients.

Spread on one side of steak, roll it up, and tie in several places with string.

2. Brush with olive oil, season with salt and pepper, and bake for 45 minutes. Let rest five minutes, remove string, and slice.
