- 1 eggplant, peeled and diced
- 1 large onion, chopped
- 1/2 green pepper, chopped
- 2 cloves garlic, chopped
- 1/4 cup olive oil
- 1 tsp salt
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/4 cup water
- 1/2 cup sliced stuffed green olives
- fresh sliced mushrooms
- 1/4 cup capers
- 1/2 tsp pepper
- 1 tbsp sugar
- 1 6oz can tomato paste
- 1/8 cup vinegar
