Chicken Piccata
When I don’t feel like cooking I pull out the menus and we order pizza or Chinese food typically. This particular evening I wasn’t in the mood for either so I began looking through the menus and started thinking... hey! I can make that! and I know how to make that too! Knowing very well I always have chicken on hand I decided to make Chicken Piccata rather than order out and pay an arm and a leg for it. I already had all the ingredients, all I needed was a little bit of inspiration... So very happy we didn’t order out. This Chicken Piccata was easy to make and delicious, and the best part... we didn’t have to wait an hour for it or reheat it! I made some rice and a simple salad. And what do you know? I saved some money too! Oh, don’t forget to spoon some of the sauce over your rice.
ingredients
- 2 boneless, skinless thin chicken breasts
- 1/2 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove garlic, sliced thin
- 3 tablespoons olive oil
- 1/4 cup dry white wine
- 3 tablespoons juice of fresh lemon
- 2 tablespoons unsalted butter
- 2 tablespoons capers
- 1/4 cup Italian parsley, minced
