Curried Butternut Squash Bisque

- 2 2-pound butternut squash, halved lengthwise, seeded
- 2 tsp. olive oil
- 2 Tbsp. butter
- 1 C. chopped onion
- 1 C. chopped carrots
- 1/2 C. chopped peeled apple
- 2 tsp. Thai red curry paste
- 2 14oz cans low-salt chicken broth
- 2 bay leaves
- 1/4 C. whipping cream
- 2 Tbsp. honey
- 6 Tbsp. sour cream, stirred to loosen
- chopped fresh cilantro
