Holiday Sweet Potatoes

  • 3 cups canned sweet potatoes or yams (1 29-oz can)
  • 1 cup sugar
  • 1/2 cup milk
  • 1/3 cup margarine, melted
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 1 cp brown sugar
  • 1/3 cup margarine, melted
  • 1/3 cup flour

Drain and mash sweet potatoes. Add sugar, milk, margarine, eggs and vanilla. Mix well. Pour into an 8-inch square Pyrex dish that has been sprayed with nonstick spray. Combine all toppings ingredients. Sprinkle over sweet potato mixture. Bake at 350 for 45 minutes.
