Spicy Thai Peanut Sauce
This is such an incredible combination of flavors. Every time I taste it I just want to sit down with a spoon and eat the whole batch. It doesn’t keep very well; the lime and mint really lose their punch fast. If you’re looking for even more flavors, you can add a bit of fish sauce or kafir lime leaves. I like to serve this with the chicken satays I make for my daughter. It is also great as a sauce for cold asian noodles with chicken or served on leafy greens. If I have any left over I like to toss it with some banana and pineapple.
ingredients
- 1 C crunchy peanut butter
- 1 C mint leaves
- Juice and zest of 3 limes
- 1 tbsp soy sauce
- 1 tbsp minced ginger
- 1/4 tsp red pepper flakes
- water as needed
directions
Add all ingredients to a food processor and pulse until well mixed but not entirely smooth. Add water to achieve desired thickness. Adjust any element to match your desired flavor.
