Gazpacho
Summer salad in a soup bowl
ingredients
- 4 large tomatoes, peeled and quartered
- 1/2 small onion, halved
- 1/2 bell pepper, halved
- 1 medium cucumber, peeled and chunked
- 1 tsp salt
- 1/2 tsp pepper
- 2T olive oil
- 3T red wine vinegar
- V8
- tabasco

Alternate: use Mr. T's bloody mary mix instead of V-8. Add 1T anchovy paste and 1T mayonnaise. Sprinkle with basil chiffonade at end.
