Vegetable Soup
with Leeks
ingredients
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 garlic cloves, chopped
- 1-2 Leeks, sliced and rinsed
- 1 potato, peeled and chopped
- 6 cups vegetable stock
- 1/2 cup soy milk (or milk or cream)

Heat 2T oil in large pan. Saute first 3 ingredients until translucent. Add next 3 ingredients and cook 5 minutes. Add stock and simmer until potatoes are tender.

Blend with immersion blender until smooth.

Stir in cream. Season with salt and pepper.
