Summer Corn Salad
ingredients
- 2 cups corn kernels, cooked
- 1 avocado, diced
- 1 pint cherry tomatos, halved
- 1/2 cup red onion, finely diced
- 1/4 cup cilantro, chopped
- 2T olive oil
- 1T fresh lime juice
- 1/2 tsp lime zest
- 1/4 tsp salt
- 1/4 tsp pepper

Combine corn, avocado, tomatos, red onion & cilantro in large serving bowl.

In small bowl, whisk together remaining ingredients. Pour over vegetables and stir gently. Serve.

Great potluck or barbecue dish since there's no mayo to go sour in the sun.
