Mango Salsa

This recipe is fresh and complements fish very well. I will always think of a great week in Florida with Chandlees, Macks, Wessels, Kosters, and Sass’ when I have this. I made the salsa and the men caught the fresh fish.

ingredients

  • 1 1/2 cups finely chopped peeled mango (about 2 mangos)
  • 1/2 c. finely chopped red bell pepper
  • 1/2 cup finely chopped red onion
  • 1/4 c. chopped fresh cilantro
  • 2 Tbsp. fresh lime juice
  • 1/4 tsp salt
  • Cilantro Sprigs (for garnish)
